The prequels aren't one thing. There is the phantom menace which is the most irrelevant. Then there is episodes two and three. Episode two is the start of the clone wars and episode three is the end of the clone wars. There are a lot of cartoons set in between those two episodes. On my first watch through I thought the best part might be Finn but then when I watched the movie a second time I realized he isn't actually that great and he is in there for jokes. It's "in" to defend the prequels for a couple reasons.
1. The generation that grew up with them is getting older. We're not so against them, because we're not all old nostalgia boners.
2. The plot in TFA was so boring and rehashed that it's making people remember the prequels more fondly.
All in all, the prequels had a lot of flaws. The acting/casting was bad and they relied too heavily on green screen. But they really showed more of the Star Wars universe than the OT and I love them for that. Plus all the best fight scenes are in the prequels period.

I think it's less about defending them as good movies, and more about pointing out that even with all the bullshit dialogue and narrative choices, it's still shot like it's Star Wars.
There's something about the establishing shots, the angles, and the fact that the characters actually talk about things other than what's going to happen next, that makes it feel like Star Wars.
