They already said in the movie that they were working with brainwashed non clone troops and that they could call in clone troopers at any given moment.
Only a few stormtrooper units were clones (501st). The others were culled or phased out of service. Most Stormtroopers are just regular chumps that get recruited. Also Jango is played by a Maori actor, not a Latino.

Then, have Temura Morrison play an older Boba Fett in one of the new episodes with makeup to make him look more middle-aged.
