She's basically a person Jamie respects as a skilled warrior. They both were in similar positions where they loved people they could never be open with (Jamie with his sister because incest is forbidden and Brienne with Renly because he was a king and also a fag). Brienne isn't beautiful and has dealt with that her entire life and is there when Jamie loses his hand and basically becomes a cripple and undesirable in that same way.
Jamie kinda views her as a respectable equal and she's kinda responsible for opening his eyes to the real world and how bad his relationship with Cersei really is

I was talking with my friend the other day who has seen the show but never read the books.
He said Stannis was one of his favorite characters because, and I quote,

I have to give the show credit for at least one thing: it actually moves the fucking plot forward with each season.
The last two books mostly just spun the plot in place whilst needlessly expanding it.
In the show I always got the impression that he admired her to some degree (and felt some melancholy over it) because she was always trying to behave like a real knight which is something he always wanted to be but never could because of his reputation. That's just what I got out of it though.
