When he said "I have the high ground", Obi-Wan was trying to gauge if Anakin turned to the dark side.
Once you turn the dark side, you lose Force Sense which allows you to detect altitude advantage. As soon as Anakin jumped, it was clear that Anakin turned to the dark side and it was safe to cut off his legs and arms.
In a sense, it was moral, but it was also basic jedi training know how. I guess that's why they call Obi-Wan a master jedi.
No, Anakin actually gets a bonus against moral highgrounds thanks to his "From My Point of View" perk, so if anything that would put Obi at a disadvantage. Obi must have been referring to his actual height advantage.

But Maul had a double edged lightsaber, which signifies a rejection of the higher=better teachings widely spread at that time, as it points both up and down, while a normal lightsaber primarily only points up. However, the force energy that high ground generates (like a reverse force of gravity) had to go somewhere, so it spread out to the sides of Maul, giving him a lateral advantage. Kylo's technique is actually solid.
You have to remember Kylo, at this point in the battle, is just trying to kill Finn. He knows Finn isn't good with a lightsaber, so when his uppercut fails to connect, Kylo does a spin to preserve momentum and use it for a downswing right on Boyega's head.
It makes sense, you could call it showing off but that's part of Kylo's MO, he's trying to intimidate Finn while fighting him in the hopes it will cause Finn to slip.
