a "shark jump" isn't a term for a show's lowest point. Its a point where something so "great" happens that requires the show's entire format changes.
Before the shark jump happy days was basically just friends. A bunch of characters given equal time and doing stuff, and fonzie was just one more side character. After all the characters that weren't played by henry winkler got less and less screen time until eventually it was just the fonzie show, and eventually people lost interest in that, and the show couldn't go back, and was over.
tl;dr, "jumping the shark" is the term for a show's peak that can never be topped and results in decline.
