Despite its size it has a very slim rofile, making it difficult to hit. It's also agile, and can spin around into different configurations. The heavy firepower makes it perfect for bombing runs when uou want to fly faster than a Y wing.

I would unironically and after careful thought choose to pilot the classic X-wing, which is the great "middle-horse" of OP's bunch. An astromech can store (10?) coordinates and help out, and there's a good mix of speed, work-horsery, and survival rate (Wedge in both battles).
My personal response time is fairly slow, unless I can learn to stretch out with my feelings in our fictional circlejerk.

My guess, without going to wookiepedia, is that The Falcon's original model is super old, so old that we never see any of them ever again throughout the films, not even the prequels.
But, through sheer love, it seems, Lando/Han kept it barely functional as a ship, but modified it specifically for smuggling - so fast and maneuverable.

Now press and hold all at once C up, C right, C down, C left, L, R, Z and Left on the d-pad. While holding these down gently move the control stick left halfway, and hold all this until you hear a sound. Do the same thing with the joystick facing right, then left, right and finally left. If it worked pink writing will come up, and using L, R and A you can select cheats such as 50 lives, wall ghost, next level, gravity, jump power etc. To make the menu reappear each time you go back to the pause screen C up, C right, C down, C left, L, R, Z and Left on the d-pad.

It represents the difference in fighting tactics between the Empire and Rebels. TIEs were always stored in a Star Destroyer or a base on a planet/moon/station, and would be deployed en masse during battles, then regroup with the base at the conclusion. Rebel ships with hyperdrives would fly into a system for a raid or scouting, take a punch with their shields and then fly back out.

in the various X-Wing games in the 90s they actually have shields that are on par with the X-Wing...it's just that atheir hull strength is shit.
but in the various books and shit yeah, the shileding is there to only save the ship from indirect and minor hits...it's so small and compact that even minor hits can utterly cripple it, no system redundancy. While the X and Y wing can be shot to shit and still operate.

Of all the ships listed there the B-Wing is the newest and most "advanced" but it's an assault bomber, it could maybe shoot down some TIEs / TIE Bombers if the other pilots were being idiots. The cannon spread is set up to strafe capital ships and it isn't built to maneuver ( none of this matters because star wars ignores Newtonian physics so w/e ).
The X-wing or TIE Advanced are probably the ones that would win in a FFA melee between all of these ships. Both are maneuverable, can take a beating, have decent weaponry and have a nice mix of traits. A-wings and Interceptors both have the same problem, they're fragile. You can't fit high capacity shields in that tiny ass A-wing so it has really mediocre ones that relies on not being hit. If you watch in Jedi those things get nicked and spin out of control. They also have terrible little laser cannons and concussion missiles instead of full torpedoes. An interceptor is just a regular TIE fighter that's 20% better in every category.

I was always really partial to the z-95 headhunter, maybe it was the hipster in me as a child but all my friends loved x-wings and a-wings and I really liked how simple and elegant the headhunter was. That and it was the ship my star wars waifu had (mara jade).
Barring that I think the Y-wing is cool as hell looking. Pretty original space ship design and I like how bluntly powerful it looks.

The Outrider is the sexiest shit ever. Dash Rendar might not be canon anymore. But at least the yt-2400 is thanks to Lucas's edits. Probably the best and most underappreciated change.
