A lot of people put a big emphasis on her being the worst part of Godzilla, even though the film would have been terrible even if she wasn't in it. Yeah watch the documentary about it if you want all the details. Basically breaking your contract is the kiss of death for Hollywood. Some of the actors also walked out too but they all came back. Fairuza Balk is interviewed saying how she wanted to leave the film but her agent told her she would never work in hollywood again if she broke a contract on a studio level film.

The whole "anime characters are Americans" thing really comes from things like kabuki theater, where the actors routinely have silly colorful wigs - it's not because they're trying to make the character look Western, it's because it's more visually interesting. Animators picked up on that hard because they could now give a character white hair or blue hair and have it look natural.
Unless a character in an anime is pale-skinned, blue-eyed, blonde, named Matthew Perry Whiterson, sprinkling every sentence with poorly-accented English, and currently wearing the American flag on his head, probably assume he's Japanese.
