So, I have several questions about this scene, and hopefully someone can answer them.
1. Why a 50's diner? If star wars takes place thousands of years in the future, then literally no one would even know what the 50's was. and that's assuming the 50's ever existed at all, since earth is never confirmed to have ever existed.
2. How long did Dexter have this vital, secret information? Why did he never tell the republic, or anyone in charge? Would he have kept it to himself forever, if Obi wan hadn't asked?
3. In a city of billions, Is Dexter the first person Obi wan asked? And he just happened to know the exact answer? Those odds are astronomical.

1) Because Lucas has a 50's fetish and it's his movie, so he gets to decide the aesthetic direction. Why are the Empire Nazis? Why are the Jedi kung fu warrior monks? It's a piece of fantasy, not science fiction; it's up to the whims of the creator. Now you can ask about whether or not it's tasteful to have a 50's diner, to which the answer is obviously "no", but it's not any more or less valid than any of the other artistic choices from a realism perspective.
2) It was never vital or secret; the whole backstory was that he's just some sleazy old friend of Obi-Wan who's been around the galaxy a lot, so Obi-Wan thought he'd be a good guy to ask about an underworld bounty hunter because the dude's been in that scene in the past. There was no need to "keep it to himself" because, prior to the attempted assassination, knowledge of Kamino wasn't anything sought after or interested in.
