IF he had said "Every sith only deals in absolutes" you'd be correct, but his statement was alot more general and sweeping, and also, considering the context of the scene it's pretty clear he was stating that Anakin was a Sith based solely on him delivering the absolutist statement of "If you're not with me then you are my enemy"
