If you examine it closely it shows the Jedi catching Dooku off guard but ultimately failing because of how sure the Jedi are of their abilities. It is said that only a Sith deal in absolutes but the Jedi are doing the same by being too sure of themselves and always being on the high ground. By jumping off the high ground and descending unto Dooku's level they failed.
The Jedi master did not even take a glance at the pistol wielding jetpack wearing Mandalorian mercenary because of how sure he was he could easily deflect the bolts and take down Dooku at the same time. It also shows the extravagance of the Jedi daring Dooku to engage him by drawing his lightsaber and pausing instead of immediately attacking the Sith Lord.
This scene epitomizes the entire series and the Jedi's downfall and how the light can also be blinding to those that live in it and wield it.

The lasers in the movies travel at visible speeds. Bullets, with our technology, fly over a 1000 feet per second. You can't see that. A Jedi isn't going to deflect something he can't see. Moreover, even if he could slow down time to see the bullets, he wouldn't be able to deflect all of them.
As per the "bullets exploding from the saber's heat," it's evident that lightsabers are only hot where they're visible. The bullets aren't going to melt a few inches away from the blade.
