Leia is literally the main character in Star Wars.
She's in the opening goddamn scene and she fights the Empire every step of the way after that. Luke goes off to hang out with a gremlin in the second movie and doesn't even do anything of any consequence in Jedi after the first act. Han is constantly trying to get paid or get out of even being there in the first place. The droids just do as they're told. Chewie just does has he's told. Lando is a backstabbing asshole. Leia is the only character 100% committed to bringing down the Empire for all three moves and that is the main plot of the series.
If you "exclude" her you're literally ignoring the actual protagonist of the original trilogy.

It's a good way to get an idea of what roles writers assign to women when they're not consciously thinking of writing them. Do they default to men when they're not writing people's wives or sisters? Do they consider women leaders in roles besides that of figureheads? It's not the biggest of big deals, but sometimes it's being conscious of the small things can make a big impact. I mean, think of it this way: The Empire was historically viewed as racist and sexist. That itself has changed a bit lately, but how different do the Rebels come off in terms of appearance or "voice"? Not much, at least before RotJ - they have one woman and one alien.
