The "warp" is space where thought directly influences reality, basically.

the Gellar field is just a projection of 'Real Space' (i.e, what the universe is and not the Warp) around the ship so that the inhabitants can travel though the warp safely. you could hop into the warp without a gellar field, but that is inadvisable

void shields are what protect the ship during combat, by shunting attacks into the warp, keeping the ship safe from 10 story high laser canons and missles/torpedos the size if a house

This. Realistically the worst that happens in the warp is you get lost, your gellar field fails, all your psychics get instantly possessed by demons and all sorts of lovecraftian shit starts running around on your ship. Losing 8/10 of your crew would be considered a massive failure.
Even the Eisenstein only lost a small number of crew and that ship was totally fucked after it's little excursion.

My advice is to pick which aspect of 40k you're most interested in and start there.
Want space marines front and center? Try the horus heresy books.
Imperial guard? Try gaunts ghosts.
Inquisition? Try eisenhorn.
I think any of these would serve as decent starting points, but knowing the framework of the lore before diving in would be really useful

There's that one Word Bearer book where they go into the warp, get lost for what they feel is 6 months, the space marines eat the crew and drink their blood because they need water, lick pipes, drink fuel, and eventually turn on each other, only to end up being demonically possessed. When they finally escape, the fleet they flew away from has only experienced 30 seconds or so.

I think this was just the eye of terror, but still. There aren't really stories that focus on when shit hits the fan. It's just peppered around here and there. I recall one book that described a ship getting lured into the area where a ship jumped to the warp, without their geller fields, and the captain only has time to sigh before a demon crawls out his eyes.
The point is that when you hit the warp unprotected, you're fucked seven dimensions to sunday. Not much else to say.

An abridged version of the Horus Hersey would probably be your best bet since it has a beginning, middle and end and distinct characters in the Emperor and his Primarchs.

Even then I don't think it would work.

Of course. Just like the books do. The beauty about 40k is that it's a practically endless universe of stories. When there are quadrillions of humans and countless billions of planets, there's no real end to what you can write about.

A war story from a Guard's perspective with chaos or tyranids and teasing some Space Marines for future movies, and a commissar executing retreating soldiers would work perfectly well.

Your standard Emperor Class battleship is 12km from bow to stern. If you go back to the Heresy, the Legion Gloriana Class Battleships are 26km from bow to stern.

I imagine the numbers are up for debate. The writers can't even decide if a Imperator class titan is 30m of 100m, and I've seen both mentioned a handful of times in various fluff.
But we're most very likely dealing with several kilometers in length of big warships nonetheless.

HH Season 1:

This.

Ciaphas cain gets boring after the first trilogy, but it's a great entry point. It's fun, and provides a pretty good basic knowledge of the entire universe from the perspective of a false hero leading grunts.
