The color convention of red=evil, blue&green=good was done so audiences could easily distinguish between the good guy and bad guy during dueling scenes. I don't think it's ever been given an in-universe explanation in the movies. In the OT I don't think red was an explicitly evil color, it was just Vader's personal favorite and looked good with his black suit
