Big Blinky sends out a thick set of ash clouds from Mt Doom to block the sun when they marched on Gondor. Gandalf mentions it in RotK after they lose Osgiliath. It's shown again at the part where you see the Nine attacking the retreating cavalry. They just didn't make it super dark because of filming requirements I suppose.
Goblins and orcs aren't supposed to travel in sunlight either. That's what made Saruman's half-orcs who could so fucking scary.
Of course, they all seemed to forget about that in the hobbit movies except in the case of the three trolls so that was disappointing.

gandalf is probably insanely strong in terms of magical potential, at least equal to sauron if not stronger, but his stipulation is that if he uses his magical powers to directly affect the mortal realm he loses them. so he can, say, use magic to crack a slab of rock so sunshine can turn the trolls to stone, but he can't speed up the sunrise or conjure sunlight or anything like that.
pretty clever character when you think about it, unfortunately that doesn't come through in the movies so well since the full extent of his power is never mentioned. in the movies he just comes across as a guy who can do magic tricks.
