Chimera-ant arc is honestly one of the most gripping and powerful stories ever told with an incredible message.
The delivery isn't for everyone though and i think most people who don't enjoy animes specifically won't enjoy what happens surrounding the main plot in the story. If the story could've been distilled into a 3 hour movie without losing any of its humanity and significance(probably impossible) it would probably be the canon number one commentary on modern war, differences between people and humanity. Hell throw love in there too.
All the thousands of hours I wasted in my youth watching animes is probably worth it solely because it allowed me to appreciate that arc in it's fullest.

A bunch of gangsters get on a train and murder the shit out of each other, also the story is nonlinear and constantly jumps through decades of time whenever the fuck it feels like. Watch it with English dubbing for Bawston accents.
Fooly Cooly - 6 episodes, ultra stylized, fast paced action comedy, and also has a bunch of symbolism about fucking which is fun to read into. Pretty much essential watching considering how short it is.
Fullmetal Alchemist Brotherhood - 66 episodes, try watching the first 4 episodes to see of it's your thing. Imagine it's just after WW2 and there are a bunch of Nazi scientists who try to fabricate immortality by conducting a bunch of fucked up human experiments; that's not actually the plot but it pretty much goes like that. Avoids lots of typical anime tropes and has a bunch of cool pseudoscience in it.
Mushi Shi - 24 (I think) episodes, super chill show about a guy who walks through an early 20th century japanese countryside, solving peoples' problems with ancient spirits and shit. Takes a very measured, scientific approach to the whole spirit aspect.
Paranoia Agent - 12 episodes, awesome fucking show. Psychological thriller about a number of people being mysteriously murdered by a kid with a baseball bat, each episode plays like a vignette that looks into the victim's life before they're murdered, intercut with some ongoing detective stuff. One of the few shows where the characters actually look asian and the whole thing is almost completely devoid of animeisms, except for that one episode you know the one. If you watch one show from this list make sure it's this one, it's totally suitable for non weabs.
