Watch the movies in literally any order you want, except keep in mind that Wrath of Khan, Search for Spock, and Voyage Home are meant to form a trilogy together.
As for the shows, I would suggest either Original Series or TNG as a starting point and then go from there.
Ultimately though, none of this fucking matters. Just watch some Star Trek.

You could watch the good episodes only such as Measure of a Man and Best of Both Worlds, and see some good stories. I guess it would be like how a lot of people's only exposure to the TOS characters is through the TOS movies. But you will never be a wizard if you go by abridged series, as you'll miss critical, character-building moments (building the character of both Trek characters and yourself for watching it) (pic related).
