Based on the way the main blade pulsates I'd say it's probably a defective crystal causing the blade to be unstable and erratic. Red crystals were usually grown by the Sith Lords when they constructed their lightsabers, so it looks like Kylo Ren fucked his up. To be honest that's probably what saves Finn from Kylo Ren, the lightsaber shorts out, enabling him to escape.

Actually, the plasma doesn,t even do anything since it's in a containment forcefield. It's the forcefield itself that acts as a weapon. The plasma is just so that the shaft is visible to the eye.

I guess the saber didn't actually fall "out" of the Cloud City like Luke did.
Now why it didn't break upon impact is another story. They're not really indestructible. Kenobi's saber in TPM was destroyed when Maul kicked it down that chasm.
And in theory if it did fall from Cloud City to Bespin it should've been destroyed in Bespin itself, cause gas giants aren't really good for small objects what with intense gravity and heat.
But in some weird way, it's possible that Abrams and Kasdan believe that gas giants are just big clouds and somehow the lightsaber fell through it and kept "falling" until it reached Jakku. Which means Jakku is in spitting distance of Bespin, cause how fast can a lightsaber travel and reach another planet in 30 years?
