I'd say the nicest in my personal experience is Dallas, Texas. It's a very modern city, some cool shopping centers and stuff. They've got an in-n-out, if that tickles your fancy.
There's a fuck-ton of highways though, and they're ridiculously high up. I didn't drive, but I'd hate to.

Dallas does have the galleria and northpark (malls) which are great. Some good museums (the crow/dma/nasher).

Minneapolis if you're going between mid May through mid October
Dallas, St Louis, Minneapolis, Houston. Basically the big Metros in this area. Houston gets you the coast, though. Austin is good for fucking bitches. Time it with a festival or convention, that's be worth it.

Yea I'd say Minnesota might be your best bet. I'm more of an /out/ person, and I loved the boundary waters when I was up there a few years ago. Of course Minneapolis and St Paul are nice cities too. Nothing particularly special about them, but they're nice. Just don't go to Mall of America, it's really not that great of a place (even the amusement park looked lame, just in case you're 7 years old or something).
Also, is New Orleans deliberately left out? I had a great time there. Even the tacky, touristy stuff like the French Quarter were a ton of fun.

Robbers Cave in Oklahoma is pretty neat if you like that kind of stuff. Was a hideout for old wild west gangs, as you could probably infer.

The Northwoods region of Minnesota and along the Mississippi on the border with Wisconsin, south of Minneapolis, is absolutely gorgeous country. That, Dallas, and Arkansas are your best bets. As much as I want to shill ND all the good stuff is in the western half anyways
