There isn't really a set bestiary as of yet but it would be relatively simple: slime 2.0 is just bigger, slightly tougher and induces more potent gainz.
DESU slimes are one of the few enemy types where you could make 'tougher recolors' of them and not have it feel videogamey, it just makes sense that there would be more than one type.
