I can't honestly choose which one is the best or the worst. They all try their best to please our needs for drawings and such, so it would be pretty harsh to mark the best and the worst. Some planets in Steven Universe have a large but finite pool of energy from which they can naturally produce souls/spirits that can enter appropriate vessels such as humans/gems/plant people. The energy these spirits are made of the same stuff that allows life to grow on the planet. When most sapient beings die, their energy is recycled into the planet.
Something about how gems are made makes it so that, not only do they never die of age, but even if they're broken, the energy that gives them life remains trapped in the shards. Since their energy is never recycled back into the world they're made from, excessive gem production will eventually drain the planet of energy and 'kill' it.
Steven (and presumably Rose) has the power to detach his spirit from its vessel temporarily (astral projection) and enter certain types of receptive vessels such as:
-A new plant person at which a spirit has not yet arrived
-A fusion (a special energy matrix that allows for the union of multiple spirits and/or their vessels)
-...and who knows what else???
"What we really are?" Well, maybe, beings created not just to conquer worlds and reproduce by draining them, but to collect and trap the energy of high-energy worlds and transport that energy to where it can be used by either the Diamonds or some higher power.
If this is true, then clearly YD and maybe even the entire gem race have kinda gone off the rails since their inception and gotten their own weird priorities
