Nick is sent undercover in a pack of predator criminals, to try and find their ringleader. So many of them have stories like he has, that he's torn between his past and his present.

First off, gnarly double post
Second, you do make a good point there. Nick's cool, calm, and collected personality, assuring himself that he'll never let 'them' see they got to him, is one of his most defining traits. In a way, it just wouldn't really seem very right to have him just start breaking down walls all of a sudden when he's spent so many years putting effort into building them. However, I think that the walls he built which separates what he wants others to see and what actually goes on in the inner workings was set up as a direct or mostly direct response to his bad experience in the Cub Scouts. He was humiliated - badly - and from there on could not let himself trust almost anybody too closely without risking the possibility of being stabbed in the back again. With the introduction of Judy, however, Nick does actually have someone he can trust and stand up for now, and later on he successfully becomes a police officer -- already, that's one or two walls he's broken down, since he doesn't have such a distrust towards people and, well, I guess the Establishment.
As I see it, breaking down the barriers he made wouldn't exactly make him a more 'mushy' character, per se, but more just like the person he wanted to be as a kid. Someone who works an honest living, has friends, and is overall just a happy man -- not a jaded and distrustful popsicle seller. Him meeting and befriending Judy and, later, joining the police force were the first two steps to achieve that. I feel like he's plenty capable of going further in the sequel.

Throw in Judy being worried about Nick sliding back, play it up as almost a faux romance feel. Him feeling these guys get him for who he is, and Judy talking about how she thought she did.
Have scenes like Judy having to take Savage to Bunny Burrows, where her family think he's Nick (she completely forgot to mention Nick was a fox to them), and they're so happy to see them together...
All while Judy wishes she could be back partnered with Nick.

If we get a sequel, I'm sure they'd be detectives rather than just ordinary cops. It's obviously gonna be a buddy cop movie, and you can't do one of those without some kind of huge crime conspiracy. And for that, the dynamic would work better if they were detectives.

Because one of the two will have to go assuming they are on duty most of the movie. Nick either has to be in uniform or if they are detectives, Judy wouldn't be wearing the cop outfit anymore.
Also, for them to become detectives between movies, there would have to be a pretty large time skip. I guess if the movie takes 5 years to make and they go real time with it, that would be feasible, but if its just a few months to a year most after the first movie, then its very unlikely that they would already be detectives. Even after the Nighthowler case.
Speaking of which, if they did go real time, Judy would be 30 and Nick would be nearly 40. Thats just wierd to me.

The movie will start with them being cops, but over time through deeper inquisitions they will slowly turn into detectives, after proving themselves worthy of the job they will both progressively be assigned to traffic cases, homicide cases, vice cases and finally arson cases respectively.
