My favorite video game of all time.
I have spent over 800 hours in it, but only managed to beat it once.
Not because it's too hard or anything, but because I get an idea for a build, play it, get to Seath, then instantly have another idea for an ever better build.
It's a vicious cycle, and I fluffed it as my chosen undead getting tempted by the infinite knowledge of Seath's Archives and relearning his fighting style, forever.
I beat the game with a true Artorias build

What's the part that you find hard to believe? A SL1, melee only, naked run is perfectly doable and quite fun. It's actually a pretty common challenge for the game and there's gotta be dozens of different playthroughs out there of people beating it like this if you just put it into youtube. There's also countless screenshots and discussions on /r/onebros iirc.

The Calamity Ring mostly just makes the game harder in the first half until you fully upgrade your weapon, because the only thing it really does is make you die in 1 hit to pretty much everything so with a weaker weapon you have to spend more time on the boss and thus increasing your chances of getting hit. So you basically have to do it 100% perfectly with no mistakes, instead of let's say 80% good without the ring on. The perma-gravelord and aggression mod are just for fun and they only slow you down. The hardest parts are the bosses anyways, so slightly more/harder regular enemies isn't that bad.
For me the hardest bosses like this were the Capra Demon (the dogs are faster than you, they kill you in 1 hit and they're hard to dodge in such a small place), Gwyn (you have to bait his long distance jump attacks by walking backwards in circles around the arena, and it's hard to not bump into walls and getting stuck, with him being so fast and unpredictable), and the 4 Kings (they attack without stopping and you have to dodge 100% perfectly every single attack since you can't block because you're dual wielding your weapon for max damage because you gotta kill them fast before the next one comes in). O&S, Artorias, Manus, and Kalameet were pretty devastating too, and Nito was the most annoying because of his ground spikes and massive AOE explosions.

I bought it on sale on Steam, realized it doesn't fucking work at all on PCs, tried to finagle with it but gave up. So I haven't played it but I'm really annoyed that the makers thought that shit is acceptable.
Pretty damn good, I thoroughly enjoyed both 1 and 2. That said I can see why it's not everyone's cup of tea.

i enjoyed the experience of my first playthrough. its a pretty unique game or at least it stood out to me.
the best part was finding channels like Vaatividya, ENB, Terramantis after finishing the game.
finding out all that lore, how everything was connected. stories and motivations of characters you only knew briefly in game. all of that shit made my appreciation of the game skyrocket. easily one of my most favorite games ever.
Prefer monster hunter myself. The souls series seems like it's taking itself to seriously. Of course, the opposite argument could be made that mh is too silly and kid friendly, but w/e, to each their own.

Dark Souls feels unique, with a very interesting world. It also feels like trying to play Kingdom Hearts on a fucking Atari. Dark Souls 2 handles like a better game but the story is shit. Dark Souls 3 will be the story of two with the gameplay of bloodborne.
