Why care about a bunch of fairies dancing around on a court or field when they could kick each others asses?

This is one of the main reasons I can't get into MMA as a fan.
MMA fans, please answer a really simple question. Skilled MMA fighters can shoot their opponent in a split second and get them into an unbreakable submission hold. Why then, when they have stunned and/or knocked down their opponent do they not put them into a lock to force the submission or referee intervention? That would lead to no unnecessary concussions, less bloodshed, and overall be way less dangerous.
But instead they just pound the shit out of their helpless opponents. And that keeps me from seeing MMA as being anything other than a no-class blood sport.
