I've got multiple GFs/FWBs, though none of them very serious.
Ideally if I was to shift into wanting something more serious I would stay with 2 of them because the ones I would it with are complete opposites of each other (e.g. One loves outdoor stuff the other hates it, one likes sports and watching them the other doesn't, one likes cooking the other doesn't, etc., etc.). Unfortunately one of them is the type to get super jealous and the other, while also poly, requires a ton of attention so realistically this arrangement probably wouldn't work out.
