I live in a country where tipping is the norm but there is none of this "rely on tips to top you up to the minimum wage bullshit". I nearly always tip but won't if I get bad service. How is that supposed to work in America? How do I know in advance that the server will let me down in some way?

Some people just don't tip. It's rude. I tip $5 or 20% (because I'm poor) whichever is higher. I feel that's fair. Unless it's pizza at 1AM and they come to my apartment door, then I tip $10 or 50%.

No, I always tip the minimum. If they do poorly they gat $5. They showed up for work, looked clean, and did their job (maybe not well). That's all I ask.
