Sounds more like he felt muslims were simply more war-like and easy to manipulate into fighting for him than christians. He didn't care about them; he just wanted to conquer Europe and a country full of people practicing a meek religion based on forgiveness was holding him back.

Incorrect. Hitler hated both, but he admired the power that both religions had over their people.
That's why he couldn't have just abolished the Church immediately in Germany, because too many people would be isolated.

Hitler is well known for saying nice things about the countries he wanted to ally or keep outside the conflict, regardless of his true opinions. This discourse tended to change depending on which side they took because it was purely propaganda.

He was being honest. If Europe were Islamic it wouldn't really have changed anything, Europeans would have succeeded anyway, but this time with a religion of dominance, conquest and war as their guide instead of an actual religion of peace.
And for this reason--and for the fact that the Muslims are frankly the only enemy worthy of the German people, Hitler had a degree of respect for them.
That said, it should not be misunderstood that Hitler thought that Germany ought to be colonized by mudslimes, merely that had it become Islamic instead of Christian, things may have been better.
And this is true, if Europe were still a heroic civilization than this problem with Islam would not exist. They would have their sandland, Europe would have its forests and mountains, and all would be well.
