In his movie The Passion of Christ, Gibson used that part of the Sacred Gospels where the Jews calling for Christ's execution say "His Blood be upon us and our children". This is some times referred to as The Blood Curse, and is coupled with anti-Semitism in history.

If I had to put an overall theory in place, I'd say that Mel started off fairly bluepilled. Then, while researching and filming the passion of the christ, he did his best to make it as accurate as possible. And a truthful telling isn't liked by the jews, for the reasons you mentioned. Passion of the Christ was the tipping point, and Gibson's later comments sealed his fate. The only reason he still gets work is that he is mega rich and can finance his own films, plus the fact that he is willing to work cheap (he did Machette 2 for next to nothing) and more so, has Jodie Foster as a BFF. Foster has pulled a lot of strings to help Gibson over the years, including refusing to star in "The Beaver" (a script that was heavily hyped inside Hollywood for ages) unless Gibson got to be her costar.
Similarly his relationship with RDJ has also helped him out. RDJ has repeatedly praised Gibson being willing to help him in his darkest hour, which has helped rehab his image, as far as his image as a good guy.
