Don't do it. By far the strongest part of NGE is the characters and the rebuilds butcher them beyond repair. All of the action is now in 3DCG, everything is more over-the-top, and everyone goes full retard in the third movie. If you haven't seen NGE, then they can still be somewhat entertaining, but in comparison they're godawful.

Rebuild 1 and 2 are okay. It's like watching Michael Bay's interpretation of Evangelion; it's not as in-depth, but the action scenes bring a nice edition that a low-budget animu from 1995 couldn't manage. Just watch them and pick and choose what you like to be canon in your head. The 3rd Rebuild is pretty unforgivable, though.
