Mexicans are the biggest group and they are getting the entry level jobs that naturally born americans need. Since they are illegal they will do these jobs for lesser pay than americans. Also if your illegal you don't pay taxes unless your a total idiot and want to get caught. This means that there is a huge supply of cheap under the minimal wage labor while natural born law abiding taxpaying americans can't compete.
Canadians and Europeans illegals have usually come to the country legally to work and have just overstayed their visit. They usually are more highly educated and pay their taxes and this is why they are more likely to get a visit from the immigration officers. However they are more likely to be forgiven since their higher education makes them usually more important to their employers who are then far more ready to defend them inorder to keep them employed for their skills and knowledge.
The case with Cubans are more of a relic from the cold war. Cuba was and is a socialist state so for ideological reasons it's considered inhumane to return people escaping communism for freedom back to where they escaped.
