I was too old for saturday morning cartoons in 2003, but I have seen a few episodes. It was very good fare for the time in its own right, but the whole style and tone of the PT era was radically different from SW in the 80's and 90's, and just rubs a lot of older fans the wrong way--think about Abrams Trek vs. TNG--it's that sort of disconnect.

I only read the luke skywalker book and the vader book.
The luke book, "I, jedi", was off putting, as it was told from lukes first person narrative point of view. I've never read a sw book in that style and it felt odd. KOTOR was great. You know WHY it was great? I don't mean pre KOTOR in terms of release order, I meant the comics that covered the Great Sith War are among the best EU material ever produced, and it fit seamlessly into the mythos. The thing with the old canon is that it's basically canon until something comes out that contradicts it.
Given the depth the old EU covered, and how the (still canon) Clone Wars cartoon references a lot of PT stuff, it's fairly safe to assume that the general outline of pre-ROTS stuff is going to remain canon.
That's part of why I don't think many people will get invested in the new post-Disney canon, because they can't do much to establish the universe without stepping over the fault lines of where they cut out the old EU.
They'll always have the shadow (of the Empire) of the old canon hanging over everything they do, which is why they switched Rey's origin planet to Jaku and the galactic capital to "Hosnian Prime", because Tatooine and Coruscant have histories so long that 40k would blush.
It's just going to feel a bit weird if stuff like Kuat and Corellia and all the planets that were of central importance in the EU are never brought up in the new canon, or are too different from how they were in the old one.
I could keep rambling on about how short-sighted I think this canon reset is, but the long and the short of it is that this new "canon" doesn't matter for shit except for anything they put enough money towards to make into a movie's story, because that's what it all comes down to: it's a cash grab.

I liked it well enough. It wasn't a traditional Star Wars story arc, it was more something to shake up the EU so it didn't become a "happy ever after" and become more like the peaceful galaxy in Star Trek, and it had a setting that allowed for smaller stories to be told while tying together all the previous divergent plot threads.
For movies, it would be totally unsuitable, but if they hopped on the TV show craze, even for only a season or two, it would be interesting. They were never going to pass up the opportunity to get the original cast back for nostalgia appeal, and to make the most of their still being alive, and the way it turned out, they fucked up the comeback worse than a YV series could have. They weren't even together, and none of them but Han Solo had anything approaching a heroic role.

Other than the Yuuzhang vong series, I think either a series set around KOTOR time period, or during the period between 3 and 4 (like this Rogue One movie but this time within the old EU canon) would be better movies, but that wouldn't involve all the nostalgia appeal of playing out the "what happened next" and desire to see the original cast back again.

I think one of the good things about the political message in the prequels is that there isn't a "these guys are behind everything" moment, even the Sith.
The only direct reference to Jewry was the Toydarian happy merchant, and that was a dismissive reference where they were a minor antagonist and the butt of jokes.
The real enemies were the systemic weaknesses of the democratic republic and the overly sanctimonious culture of the Jedi.
There's an interesting book written by a leftist that rips into George Lucas for writing pro-monarchy, pro-spirituality, pro-heroic, anti-democracy stories even BEFORE the prequels came out with their explicitly anti-democratic sentiment!

It's very interesting, because it shows Star Wars has a political message that left wingers are capable of finding in opposition to them. JJ Abrams is a hack. None of his movies are fun on anything other than superficial special effects and barebones pacing that gives it energy, but not substance.
Neither movie has the depths old Star Wars/Trek had. Even the prequels had depth in them, it was mostly that the filming, mise en scene, and writing of the character plot was abysmal.
