Can someone tell me how a left anarchist society operates?
I've read the Anarchist FAQ and some other essays/papers, but I can't wrap my head around the concept. How does it work?

Anarchy is ALWAYS a temporary state, where eventually, a new government will be established.

Professions are organized into Syndicates, whose members agree to a contract. Individuals determine which goods & services are needed and negotiate with syndicates and their agents. Everyone has the choice to engage with the syndicates they desire, or not.
A town/village/city/metropol can be a syndicate, and each person who dwells there agrees to the syndicate/contract. It would likely contain many of the same rules sets that you have where you live now.
Pluralities of cities can organize into a syndicate, regions etc. The only constant is that all who are part of it agree to the contract.
Contracts can be negotiated and changed by unanimous consent only, all parties agree or break with that syndicate.
Imagine if you only supported/paid for those things that you wanted and agreed with?
You don't pay for a war that you don't want, if someone has a beef, they had better be willing to pay with their own blood and gold to do it.
Persons who break a contract are excluded from that syndicate, with the ultimate consequence being expulsion from all syndicates.

Anarchy can only exist as a microcosm inside a larger governing body.
There is no such thing as an "anarchist society".
To put it simply, when a body of people no longer behave as if there are laws they must adhere to, you have anarchy. Or when people willfully choose to ignore the governing body, you have anarchy.
Inside of a society it is possible to completely ignore all of the rules and laws, and to simply perform actions based on whatever a person wants to do.
Even if a society can punish someone later for ignoring the rules, the period of time where the person or group is not being interfered with by the governing body is anarchy.

The 'Left' is to be found in the labor syndicate; as it seeks to preserve and promote it's members. A Syndicate member likely pays dues into a fund managed by the syndicate, which is utilized to further the welfare of it's members. Not all syndicates need be 'Leftist', but there would be explicitly leftist syndicates. It's an organizing model that allows such an option.

I wouldn't take much time trying to understand how an ancom or ansoc society would operate. They generally believe to some change in human nature so people would actually stop killing each other or somethig.
The ancap theory does, however, give precise answers in who would provide protection, public services and etc. in a stateless society. Services such as roads, protection and private law and courts; giving historical precedents to all of these matters and explaining why pretty much most of the things the state provides are either undesirable or replaceable with private and voluntary action.

It sounds like an incredibly unwieldy and weak society that would be quickly conquered by pretty much anything else.
Other societies have attempted similar but less extreme systems and outsiders just pay an insider to gridlock it and then they take everything and everyone as their property.
