Only bit of the countryside I know is Cornwall, but that's nice. You can go and sit in the pub and have a chat with the locals, they're friendly. It's quiet as fuck and they do fox hunting and all that shit. I'm talking small towns, avoid anything with more than say 15000 people. Penzance is ok but still it's the villages that are good.
I'm sure there are many nice places in the countryside but I only know the one bit. Anywhere too near London is going to basically be the suburbs of London so you'll probably need to sit on a train for at least three hours assuming you land at Heathrow.
