So im visiting Iceland tomorrow and will stay for a few days to check out all the sights. Im pretty new to photography, any of you guys have any perticular tips / ideas for pictures? Thanks!

The best light is usually right during/after dawn, and right before/during sunset. Shooting at mid day (10am-3pm) will usually lead to flat bland photos.
Try to keep distractions out of your frame.
Learn about the rule of thirds and try to work with it until you can learn to go beyond it.

Yes! Definitely take that OP photo, it's the famous MætÞerhorn, in the town of Zarmått right above the famous Zürchérgéschneðzeltéss vulcano.
Go get this shot. Don't forget to bring a tripod and a bunch of ND filters.
