Let's imagine I was doing video work and managed to fuck up the focus. How fixable is soft focus? Anyone ever have good results? I need some good news.

Let's imagine it's not reshootable.
I shot a wedding and slightly backfocused the whole ceremony with my B cam, unfortunately the B cam was the continuous shot of the whole ceremony.
I had used focus peaking to check focus and it was highlighting the couple for sharp focus, this is when I found out focus peaking was not 100% accurate.
I slightly sharpened the footage, this footage was for DVD only, by the time it was sharpened and then put on DVD for TV play it was unnoticable.
Depends how bad you fucked up though..

No, if it can't be hidden via sharpening then you fucked up beyond the point of no return.
My solution to hiding your fuck up is to blame it on the equipment and apologize profusely while not actively taking any blame.

Reshoot. Downsample to 120x80. Tell them you meant to shoot in soft focus for the "bold and the beautiful" look.

I figure if I sharpen it, denoise it/remove some of the grain and desaturate it a little, maybe reduce contrast just a smidge... it should look more than good.

There is still hope AND soft focus is salvageable but no one is stating ways to unfuck soft focus.
Try sharpening with the tool, unmask tool, play with the contrast and desaturate slightly. It won't look as good as if it were in focus but you can make it so that no one has a complaint about it. Mitigating the reaction of a complaint is the aim. If you can remove grain do that too.

Soft focus is an in-focus shot with softened details. Soft focus is not missed focus. When you miss focus, there is no way to fix it, and if there was, "desaturate slightly" wouldn't be included.
