Post is my favorite, but more importantly it is the least stigmatizing for a new listener. It's the best place to start regardless of opinions about which album is best overall.

Some artists have career-defining albums. (Illmatic, Spiderland, Glass Swords, etc). Bjork is not one of them. 4 of her solo-career albums are top-tier in my book, and the rest have been at least pretty good.
Go Debut -> Post -> Homogenic -> Vulnicura, then check out everything in between.
