I don't know why jtg recommends Kind of Blue as a first album. It's accessible, sure, but it's completely different from anything that preceded it. The listener will perceive the lack of functional harmony subconsciously I would recommend Relaxin' with the Miles Davis Quintet (or any of the Prestige quintet albums) instead. It's much more representative of the majority of jazz..

If you can get a pdf of Jazz: The First 100 Years, that can take you through early influences to more or less modern day stuff. It's really nice to be aware of pervading traits and history of the music, you know?
