I think collecting vintage vinyl records sounds like a fun and reasonable hobby but people who spend money on vinyl copies of new releases amuse me to no end.
Collecting it for the artwork has nothing wrong about it and it doesn't seem to fit your other stereotypes about le hipster vinyls fags

Nothing wrong with vinyl. Its resurgence is just a reaction to the overly digital world we live in today -- our lives are consumed by computers, phones, etc. and that has changed the way the masses have listened to music. Vinyl is the complete opposite of the digital world. It is physical, it takes up space, it requires more work, and it costs money.
At the end of the day, it's just nice to have a good hobby that doesn't require you staring at a screen for hours.

Personally I just buy vinyls of albums that are either exclusive to the format, or albums that have a "vinyl vibe" to them. I own tapes and CDs too. The same rule applies to them too, or if the CD release has bonus tracks that are worth hearing.
Besides that, if I come across a really good find of course I'll pick it up. Most recently, I found a Cocteau Twins compilation, Kate Bush's Sensual World, and Brian Eno's Music For Airports in the used vinyl section at a Goodwill.

Despite all the shit millennials get (note: I'm a "grandpa by 4 chan standards) for being addicted to the Internet, Social Media, their smartphones, etc, it seems that more and more of them are balancing their lives with hobbies that don't involve a screen and a keyboard.
DIY seems hotter than ever, and millennials seem to be a large percentage of that resurgence, whether it's woodworking, darkroom photography, or making craft beer.
I think after growing up their whole lives on the Internet and in front of screens, millennials are starting to get bored of it. Not totally, obviously, but no longer do they want to spend 8-10 hours per day on it.

i'll actually answer this seriously :
- buying records (not "vinyl") give weight to the music-purchasing experience.
buying a bunch of digi files, while i do it occasionally, do not feel the same at all. and most of the time the record is more or less at the same price than the digis, (generally wav are around 5 euros for an EP, a 12" is 8e). this is the principal reason. and...
- because i like to DJ and doing it with records is the only proper way, for me anyway.
last point - if the music is properly produced, mastered and pressed, there shouldn't be any significant difference between the record's sound and the digital sound. only when the music sounds very digital and unglued, for example, then the slight distortion induced by the vinyl might be welcome. or when the pressing is shit and the digi sounds obviously better than the record. otherwise it doesn't sound better or worse.
