Beethoven symphonies 3, 5, 6, 7, 8. & 9. Start with 5 & 9 though.
Liebestraume no3 by Liszt (crackly old rubinstein version probably still the best)
Beethoven Moonlight and Waldstein sonatas
Debussy - Clair de lune (pretty much the most obvious piece there is but its famous for good reason)
Chopin Ballade No 1 (takes a few listens but oh god its good)
Berg Sonata No 1 (much weirder than the rest, if you can get a video of someone playing it you feel the excitement of it much more)
Satie - all gnossienes and gynopedies (very minimalist calm stuff, similar to aphex's avril 14th if you know it)
Modernish orchestral stuff:
Rhapsody in Blue by Gershwin
Appalachian Spring by Copland
im still quite entry level and I only really know piano based stuff but some things worth listening to
