Are keyboardists particularly important in rock, or are they completely expendable?
It seems like most keyboardists from the big rock bands are really there for just a bit of flavor text.
Post-Punk managed to give us some pretty god-tier synth players, but that's not really the same thing.

Depends on what's important to you. Keyboardists/organists/pianists are there to add texture, to fill out harmonies. If you like that, they're important.

this pretty much sums it up because more often than not, keyboardists in pop/rock bands tend to not be the most technically proficient when stacked against other keyboardists from other genres (like jazz or 'classical').

True, but rock musicians of all types are generally less proficient than their counterparts in other genres. There are unknown college kids who learning classical guitar who make Slash look like a joke but he's still famous and rich and revered. Same with jazz drummers, etc.
