Obviously you have all the first tier Prince albums, but some other great albums worth checking out are Dirty Mind, Prince, Diamonds and Pearls and Art Official Age. None of his others are near his peak in quality, but they are all at least worth a listen

Lovesexy and 'Love Symbol' are very strong albums that sum up what he was working toward in his early career. Sign 'O the Times is something that is going to take multiple listens and even time to really appreciate. If you're going for 90's Prince, Emancipation is a surprisingly strong album. Modern Prince is more hit-or-miss, 3121 is by far his best modern work. HitnRun was also surprisingly good.
