Bo Diddley (on the rock end)
Chuck Berry (yes, really)
Charley Patton
Robert Johnson
Son House
Bessie Smith
Albert Collins
Lightnin' Hopkins
John Lee Hooker
Those people have all produced multiple classic blues sides. Some of them-like Robert Johnson-have their whole recorded catalog classified as "classic" now.
There's also dozens of lesser artists that are good to know as well, but you can find them later. Everyone has to start somewhere, and the above list is a great place to start.
