The only time you should have a problem with a live show being different is if its an orchestra and they fuck up playing the score pretty badly. Orchestras should have no excuse for fucking up. The scores right in front of them, they're rehearsed the pieces, they should be able to play it right on the night, or GTFO of the orchestra.

the reason rok/pop bands dont have to do this is that they're not playing from a score (except some touring musicians playing with big acts who actually score out live parts for their backing musicians - like top tier R&B artists.)

Most rock bands write their own material, so they have more authority on how to perform their shit, and it's just a completely different tradition. The role of the composer is very venerated in classical music, and most performers and conductors are all about reaching an interpretation that honors the composer's intentions. But some classical music does have room for improv, like many baroque thangs. Anyway, the deconstruction of established tunes is something that jazzers have done for ages, and it fits into rock music as well. Songs aren't seen as these sacred things.
