in my headcanon, and my stories the birdpones are just mixes of pone and griffon, but instead of hippogriff shit, they gain bird characteristics and sometimes carnivorous diets. they make nests, can call as birds do, and sometimes bob their heads

I actually don't know that, either--just that handling them is a really, really bad thing and the locals only eat them if you're absolutely desperate and after basically skinning it out and charring the bird to destroy the toxic alkaloids. They're basically like feathered poison arrow frogs and they get the poison the same way the frogs do--by eating poison beetles.

They sell poison arrow frogs which aren't exactly poison anymore, so I figure it would work the same with pitohuis.

Right, a subcategory of pegasi that takes specific feather patterns and behaviours from respective species of birds. Then, as a content creator, you could easily come up with more traits to separate them from 'regular' pegasi like egg-laying and tail feathers.

From an extradiegetic point of view, they're all pegasi designed around the theme of "Birds", which means they can be put into their own thematic category of ponies and be discussed. You could easily come up with more thematic categories, like "pegasi with yellow coats", "elemental unicorns", "furniture earth ponies", etc.
