I'm thinking that she's about the equivalence of 30-35 in the show at present. As we've seen her in pictures with 80's style fashion, we can probably assume that she's actually older than the mane 6. (Who I figure are all in their 20's with rarity being oldest at around 28 or 29.)
Which would put her in her late teens as Applejack's teacher. But hey, maybe it's just been her life's ambition to teach since she was young. Or maybe teachers were hard to come by in a podunk farming village.
Or maybe, just maybe, it's all a fictional world where consistencies are only upheld by creators that care enough think through storylines for every character and their eventual intertwinings.

Yeah, canonically she's only supposed to be only slightly older than the M6, but I arbitrarily decided to age her up for the purposes of the story. I'd have her pegged as an early 20's, fresh-out-of-college teacher in this story, and about 35-40 in the TV series. Doesn't stretch belief too much, imo.
