The only real piece of unicorn technology we know of from the show is from Tank's permanently enchanted propeller hat. What honestly makes more sense on which of the two pony tribes are capable of creating technology. The magical unicorn who uses magic to solve all their problems and inconveniences or the non magical Earth pony who has to think around a problem and come up with a solution? I mean, the unicorns even have a spell for auto-tune of all things. Not a device, a spell. Because why create something to solve a problem when you can just magic a spell instead. Now think back these past 5 seasons and think of how many unicorn teachers/professors who weren't teaching just magic. Now how many Earth pony teachers/professors?
Also I'd like to point out that Flim and Flam and their cider machine don't count. Honestly ask yourself if Flim and Flam look like the mechanical engineering type to you from everything we've seen from them. It makes more sense that they had their early start doing small scams and had a good run earning money. They then used that money to commission Earth pony engineers to build a cider machine that would run on unicorn magic.

Do you know why I like earth ponies in the first place? It's because they resemble humans in a lot of ways. They manipulate their enviroment to fulfill their needs, they achieve feets like making flying machines not because they feel inadequate to those who can but because they said they would, and like I said before they are quick to adapt.
You can pick your unicorn or your pegasi, but if you need to say that the earth pony race needs to be more flashy to fit your needs then you need to pick a different race because the earth pony is not for you.

Or that their magic is the hardest to steal most likely due to the amount of control and how integral their magic is. With unicorns while there is control of their magic, all uses of it are conscious thought and its the most obvious and surface level of magic. With Pegasuses the magic is much more instinct but still conscious thought and is less obvious. For earth ponies however the magic that they control is controlled without a single thought on their behalf all unconscious and is so deep down that stealing it is much harder.
Essentially stealing magic from each of the three races is like pulling water from different depth wells with the difficulty of doing so being unicorn, pegasus, and earth pony respectively. Earth ponies being last might be more due to the difficulty of taking such magic not the amount present.
