Twilight is closest to being my waifu, but I doubt she would ever choose me. In fact, I don't think any of them would. I'm not smart enough for Twilight, not fabulous enough for Rarity, not fit for Rainbow, I don't like parties, I'm not enough of a man to make Fluttershy feel safe and I'm too clumsy to work at farm.

It's Pinkie, she's friends with anything; the hard part would be breaking from the friend zone, she might be harem protagonist levels of dense when it comes to non platonic love, MIGHT. Her parents would almost certainly be against it every step of the way. You'd probably die of diabetes before all that though.

Introverted but friendly, kind. Probably the only one that would be completely okay with you eating meat, getting past her shell would be hard but worth it. With the right balance of gentleness and firmness you'd be able to become more than friends. Make sure you have a backbone though, shes the type of girl that needs to feel safe at ALL times to truly be able to let her inner feels flow.
The other three are a no go, I think.
Twilight would see you as a font of knowledge and information, an unknown, she's too much caught in that and being a princess to care about romance, much less with a non pony.
Applejack would be the type to be racist; the kind of friendly, harmless, folksy racism that permeates country folk; Apples would probably just stick with just earth ponies even.
Rarity is the wild card; it depends on how you interpret her and the fandom; on one side you have a no nonsense posh pony that dreams of high society life and on the other you have the same but with an inter-species kink out of it being taboo and forbidden love or some shit.
I feel the only time she'd ever consider such thing would be as a publicity stunt depending on ponies actual views on inter species as harmless or the new hotness; fashion and art aficionados are the most insufferable people like that. She'd be a generous friend otherwise.
