You can't change the past, it's impossible. If you could, there's a possibility that you could go back and create a world where you never existed, so you would have never been able to do what you did. It's a paradox. You can only change the past of an identical parallel world. When you return to the future of that world, it has changed, but your original universe remains intact. You basically become a universal immigrant. By continuing to go back in time, Starlight and Twilight just kept traveling to different parallel worlds, essentially creating the series of dark timelines seen in the finale.
Ironically, if Twilight and Spike hadn't bothered to touch the scroll, then nothing would have happened to them since their universe wouldn't change. Starlight would've just disappeared from that world, never to be seen again.
You want proof? If the ability to alter the timeline WAS possible, why wouldn't the timeline have changed the second Starlight went through the portal? There would have been no time to grab the scroll since the universe would've already changed.
Furthermore, there wouldn't have been time for Pinkie to poke her head in and eat that cake.

I feel like the time travel laws used were a result of how the spell exactly worked with their universe and not with how the universe itself worked.
As if two people built different time machines in the same universe and they both worked under different mechanics, one was safe and allowed no casuality problems or contradictions, effectively meaning your time traveling did no harm.
While the other dumped you into the split alternate timeline that your time travel mucking created (and somehow preserving the time travelers' bodies and minds from the time line they're from).

Starswirl's initial spell indicates that the main fim world is set in stone. But using the fact that we know time travel IS possible and coupled with the fact that Equestria Girls and other sources establish a multiverse exists, maybe Starlight figured out how to "change the world" by going to a parallel world's past. It would make more sense to say Starlight's spell rewrote the entire universe each time, with an erroneous set of data, than it would be to call it a time spell. The other multiverses all didn't exist.
