MF DOOM is good at clever limerick writing and probably has some knowledge into the field of surreal literature, but other than him, I don't think I can accurately judge the field of hip-hop.
But then again, hip-hop culture is based on braggadocio and lyrical delivery, so of course, you often won't find many rappers who employ advanced writing structures and world building in their lyrics, due to it being easier to just write lyrics that rhyme and simplified metaphors to fit their rhyme scheme.
That being said, Story by Clipping is a damn good example of a rapper using their lyrics to their best and most abstract abilities.

The best rap songs are definitely on par with the greatest poems. For example the rapper Canibus song "Poet Laureate" which is a 45 minute long multisyllabic rap.

Rap stands for rhythm and poetry. Rap is poetry. Most rappers today have a larger vocabulary than the greatest poets and can do complex poetry techniques with ease. it is much harder to write a multisyllabic meaningful rap than it is your average poem.

I'm generally interested in a response so if you want to argue this then send me some good poems. I'm willing to change my pov. I've read a bit of Ezra Pound and T S Eliot so far.

The human voice is naturally pleasant to listen to, especially if it is used together with drums in a drumlike, rythmical fashion. Pretty much all voices in rap are modified so every second bar is doubled, etc. Rap is cool to listen to even if you don't understand what the black guy is saying behind the drums, but understanding can give meaning and is an added treat. I just like rhymes and puns.

Rap lyrics will never measure up to the prowess of epic poetry however rap music can be poetic.
Rap music has a much broader audience today and this isn't a bad thing. Many poetic rappers are often nobodies but some bigger name poetic rappers include Kendrick Lamar and Tupac, both of whom, im sure, have already been mentioned in this thread.

Also a modern DAW allows for far more complex arrangement and structured composition than sheet music. Any good composer will know how to use at least one, as well as sheet music of course.
