I love T.H. White's The Once and Future King, and it's a fun read either as an introduction or something to go over later and laugh at all the funny ways it references The Morte D'Arthur.
I'd start with De Troyes Romances, Everyman has a great annotated edition, followed by Sir Gawain and the Green Knight. Then you're ready to dive into L Morte D'Arthur by Malroy.
