Why would Poe & Finn be gay? Or Anna & Elsa? Is the LGBT mindset such that people of the same sex can't care about each other without it being romantic or even sexual (even if they're siblings)? Or is this really a matter of retarded 'shipping apart from any real LGBT considerations?

I think it's mainly a shipping thing, and definitely isn't limited to the LGBT community. It actually seems more common among straights, any time people of the opposite sex are emotionally close to each other in any way, everyone insists on seeing it as romantic/sexual, and this is true of male/female platonic relationships both in fiction and irl. And this whole attitude seems to be encouraged by the fact that straight people are "supposed to" be homosocial, while gay people aren't necessarily heterosocial. So the idea that male/female relationships are automatically romantic/sexual actually seems stronger than the idea that same-sex relationships automatically should be.

Shipping is not inherently related to lgbt stuff.
It's just that some women get all hot and giddy when imagining 2 guys doing something etc, and at times it's just a fetish projected on 2 characters.
And at times 2 characters are simply (accidentally) designed with very matching personality traits and people notice that.

But usually it's just erotic smut.

It's really not the lgbt mindset that's so strongly into shipping. Straight cis girls are usually the ones righting your gay slash and straight cis boys are often the ones drawing your lesbian porn.
